What You Need
Here’s what I put on my Balsamic Onion, Pear & Rocket Pizza:
- Red onion
- Brown onion
- Balsamic vinegar—get the best quality brand you can find
- Brown sugar
- Butter
- Feta—crumbled into small pieces
- Baby rocket
- Pear—peeled and sliced thinly just before serving so the pear doesn’t brown
How to Make this Balsamic Onion, Pear & Rocket Pizza
Preparing the Pizza
Peel one large red onion and one large brown onion, then cut them into crescent-shaped pieces.
Heat a large skillet over medium heat and add one tablespoon of butter. Once the butter melts, add the onions, three tablespoons of balsamic vinegar, and one tablespoon of brown sugar. Stir with a wooden spoon constantly until the onions soften and the balsamic sauce thickens.

Assembling the Pizza
Lay your prepared homemade pizza dough base out with the olive oil and salt already applied to the outer edges of the crust.

Use a spoon to spread the balsamic onion mixture evenly over the pizza base.
Crumble the feta cheese evenly on top.
Cook the pizza.
Once cooked, add the baby rocket.
Peel and thinly slice the pear, then arrange the slices over the rocket.
When to Cut and Serve
This Balsamic Onion, Pear and Rocket Pizza needs to sit for a few minutes before being cut and served. I typically slice it into 12 pieces when serving a crowd or 8 pieces when there’s no rush for the pizza!

Ingredients
Balsamic Onions
- 1 red onion, sliced lengthwise into crescent-shaped pieces
- 1 brown onion, sliced lengthwise into crescent-shaped pieces
- 1 T butter
- 3 T balsamic vinegar
- 1 T brown sugar
Toppings
- 50 g feta, crumbled
- 10 g baby rocket
- 1/2 fresh pear, sliced thinly
Instructions
- Preheat a medium skillet over medium-low heat.
- Slice the onions lengthwise into crescent-shaped pieces.
- Sauté the onions in the butter until softened.
- Add the balsamic vinegar and brown sugar to the skillet. Use a wooden spoon to combine. Cook, stirring regularly, until the liquid reduces and thickens.
- Take one prepared homemade pizza dough base and spread the balsamic onions evenly over the pizza base.
- Sprinkle the feta over the onions, or if preferred, add the feta after baking.
- Once cooked, top the pizza with the baby rocket and thinly sliced pear.
